Hey, Friends! Happy Foodie Friday. Today I’ll be sharing some back to school meal ideas and snacks using three of my favorite appliances…my blender, my air fryer and my instant pot!
Ingredients: 1 peach with pit removed, 4 oz plain Greek Yogurt, 1 cup ice, 1 tsp truvia.
Instructions: Blend all ingredients together and enjoy!
Ingredients: 1 (100 calorie) whole wheat English muffin, 1 egg, 1 slice sharp cheese and optional veggies (tomato and spinach.)
Instructions: Using a ramekin dish, cook egg in the microwave for 1 minute. Cut the English muffin in half and using canola spray, lightly spray the inside and outside of each half. Place egg on one of half of the English muffin and top with cheese followed by the other half of the English muffin. Cook in the air fryer for 5 minutes at 375.
Grilled Cheese Sandwich With Avocado
Ingredients: Whole wheat bread, 2 slices sharp cheddar cheese, 1/2 avocado, salt & pepper.
Instructions: Using canola spray, lightly spray both sides of the bread and layer with cheese and avocado slices. Cook in air fryer for 5 minutes at 370. Serve with Sweet Potato Fries or fresh veggies.
Instant Pot Chicken Tacos
Ingredients: 1 TB olive oil or canola oil, 1 small white onion, diced, 1 pound boneless skinless chicken breast, 1 cup chicken broth, and 1 cup salsa.
Instructions: Using the saute function, heat oil and cook onion until tender. Once onion is translucent add taco seasoning mix and stir. Add chicken broth and salsa, mix well. Add chicken breasts. Secure lid on the pressure cooker and pressure cook for 10 minutes. Once that 10 minutes is up, let the pressure cooker slow release for 10 minutes. After 10 minutes, move the valve to the quick release position. Remove chicken, shred and place back in the cooking chamber. Now it’s time to build your tacos!
Dorm Room Foods
Eating healthy on campus can be challenging, but not impossible. Here are a few foods that could be kept on hand in a dorm room.
- Bananas and apples. (Yes, these can spoil so only purchase a few at a time)
- Whole wheat crackers and peanut butter
- Microwave popcorn
- Bamba peanut snacks
- Oatmeal packets
- Harvest snap peas
