I don’t think I discovered chicken salad until college. Sad isn’t it? I grew up eating tuna salad, but we never really had egg salad or chicken salad. I know…I was so deprived. One of my jobs in between undergrad and grad school was working as a cook for a large HR firm. There were only 2 of us that worked in the kitchen and my co worker thought chicken salad belonged on the menu every single day. It was kind of hard to disagree with the woman because she looked like my grandma. I think each batch contained a salt shaker and a jar of mayonnaise.

Looking back, what I did like about that recipe is how she combined grapes and onions in the same recipe, which was surprisingly delicious. By replacing the mayo with nonfat greek yogurt, you’ll be sure to save on fat and calories.

I love making a batch of this and using it for quick and easy lunches throughout the week.  It’s also good on a sandwich or just by itself!

I also love easy recipes like this because they don’t completely stress me out. By the way, how was your St. Patrick’s day? I mention stress free recipes, because my St. Patty’s was a little stressful. I discovered that somebody had accidentally deleted a really important shared folder on dropbox. It was a file from last year that included over 18 months of hard work. I know, I was stupid for not making sure I had a backup. But I figured…hey, it’s dropbox and I can always restore deleted files. Right? Wrong! She deleted them in October and I happened to discover this on March 17th. FYI, if it’s been longer than 30 days and you don’t have a dropbpox pro account with packrat, you are basically out of luck. I desperately sought the advice of people smarter than me and it was no use. I was so frustrated and just felt so helpless.

Until…..

A colleague sent me a fb note at 10 pm that night saying she had backed up her computer basically right before the file got deleted. I was so happy that I did an Irish jig all around the house.  I guess I was blessed with the luck of the Irish on St. Patrick’s day?  Needless to say, I’ve upgraded to pro and now I have packrat. I will also make sure I’m backing up ALL files from now on.

By the way, Nebraska is going to the NCAA and I couldn’t be happier. First time in 16 years! We play Friday against Baylor in San Antonio. Do you have any favorite basketball foods that you’re serving up during march madness?

Chicken salad on greens

  • 10 minutes
  • 7 ingredients
  • 2 steps

Ingredients

  • 6-8 oz Boneless skinless Chicken breast, cut into chunks
  • 1 cup grapes, halved
  • 1 cup celery, chopped
  • 1 Tablespoon red onion, finely chopped
  • 1 (5-6 oz) container nonfat greek yogurt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt

Instructions

  1. Mix all ingredients together and serve on greens, with sandwich bread, or by itself.
  2. Tip: The nutrition facts are for 1/2 cup, which will usually be great on a sandwich using 45 cal/slice bread. If I’m eating it on a salad or by itself, I will probably eat 1-1.5 cups.
