Mint Chocolate Chip Milkshake

Dear fresh mint, where have you been all my life? Oh yeah….in my ice cream.

Mint chocolate chip ice cream holds a special place in my heart. It reminds me of vacationing with my family every summer in Colorado. Even now as an adult, my husband and I travel every summer to Colorado to spend a week with my parents, siblings and their children. One of our favorite things is to walk to the keystone village and have ice cream by the lake. That particular ice cream shop introduced me to mint chocolate chip ice cream and every summer I look forward to being with my family and eating ice cream by the lake!

Another thing I look forward to is shamrock shakes in February. Not the kind you get at the golden arches, but the kind I make in my own kitchen. This recipe is seriously heaven in a glass and I’m pretty sure St Patrick would agree. I love the fresh mint mixed with chocolate chips and delicious  vanilla ice cream. It might be a little weird blending veggies in your ice cream, but the mint makes this shamrock shake insanely delicious.

And before you jump all over me for this not being healthy, take a chill pill. Or drink it…..because this is a great recipe and you should treat yourself to a milkshake every once in a while.
