Chicken salad on greens
Ingredients
- 6-8 oz Boneless skinless Chicken breast, cut into chunks
- 1 cup grapes, halved
- 1 cup celery, chopped
- 1 Tablespoon red onion, finely chopped
- 1 (5-6 oz) container nonfat greek yogurt
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
Instructions
- Mix all ingredients together and serve on greens, with sandwich bread, or by itself.
- Tip: The nutrition facts are for 1/2 cup, which will usually be great on a sandwich using 45 cal/slice bread. If I’m eating it on a salad or by itself, I will probably eat 1-1.5 cups.
