Presidential Panini

Ingredients

  • 12 slices sourdough bread
  • 1 1/2 cup mixed greens
  • 12 ounces thinly sliced turkey breast
  • 2 TB cranberry chutney (below)
  • 12 ounces honey goat cheese or cream cheese
  • 3/4 cup sliced toasted almonds
  • 6 TBSP. butter
  • Cranberry Chutney:
  • 1 cup orange juice
  • 1/4 cup sugar
  • 1 cinnamon stick
  • 6 cups frozen cranberries, thawed
  • 1 tablespoon honey
  • zest of one orange

Instructions

  1. Spread 6 slices of bread with equal parts cranberry chutney (a few TBSP. each)
  2. Spread the other slices with 2 ounce goat cheese or cream cheese each
  3. Sprinkle almonds on the slices of bread covered with chutney
  4. Layer greens on top of chutney, followed by turkey
  5. Top sandwich with slice of bread covered in goat cheese and spread 1/2 TBSP. butter on outside facing sides of bread
  6. Heat panini press to medium/high
  7. Place sandwiches in panini press and cook until golden
  8. Chutney Instructions:
  9. Bring the orange juice and sugar to a boil. When it is rapidly boiling, add the cinnamon stick and cranberries. Turn the heat to low and stir the cranberries, constantly, at first.
  10. After ten minutes or so, the cranberries will start to pop and break down. Continue to stir, but a little less frequently now. Leave the pot uncovered to speed the process along.
  11. After about half an hour, the cranberries will have popped, released their liquid, and started to reduce. At this point, add the honey and the orange zest. Allow to cool and thicken for a few minutes. Use leftover chutney for dipping sauce if you want.
