Jicama Slaw and the Foodie Generation

Ingredients

  • 1 large jicama, peeled and cut into matchsticks
  • 1/2 purple cabbage, shredded
  • 1 red bell pepper, seeded, diced
  • 2 large carrots, peeled, shredded
  • 1/2 c freshly squeezed lime juice
  • 2 TBSP rice vinegar
  • 2 TBSP honey
  • 2 TBSP chili powder
  • 1 tsp celery salt
  • 1/4 cup chopped cilantro

Instructions

  1. Place jicama, cabbage, red bell pepper, and carrots in a large bowl. Whisk together the lime juice, vinegar, chili powder, and honey in a medium bowl. Season with salt. Pour the dressing over the jicama mixture and toss to coat well. Fold in the cilantro. Let stand at room temperature for 15 minutes before serving.
