Peppermint Chocolate Coffee Cupcakes
Ingredients
- 2 cups flour
- 2 cups sugar
- 3/4 cup cocoa powder
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 tsp espresso powder
- 2 eggs
- 1/2 cup oil
- 1 cup milk
- 1 tsp peppermint extract
- 1 cup boiling water
- 8 oz cream cheese
- 3 cups powdered sugar
- 1 tsp peppermint extract
Instructions
- Preheat oven to 350 degrees.
- Combine all dry ingredients, mix until just combined
- Add eggs, oil, milk, and extract into the mixer. Mix for 30 seconds.
- Add boiling water, mix on high for 1 minute.
- Portion into cupcake pan with liners in place first. Fill 2/3 of the way up.
- Bake for 20 minutes or until toothpick comes out clean.
- While cupcakes are baking, in a mixer with paddle attachment, mix 8 oz cream cheese.
- Mixing on low add 1/4 cup of powdered sugar at a time. after each full cup, mix on high 30 seconds.
- Once third cup is added, add peppermint extract, mix until fluffy, if too thick you can thin with 1 Tbsp of water at a time until desired consistency.
- Frost cupcakes once cooled.
