Ingredients

  • 1 avocado, cored, peeled and diced
  • 1 cup red bell pepper, chopped
  • 1 cup orange or yellow bell pepper, chopped
  • 1 cup cucumber, small dice
  • 1 cup zucchini, small dice
  • 1 cup tomato, small dice
  • 2 TB fresh parsley, minced
  • 2 green onions, finely chopped
  • 2 TB canola or olive oil
  • 1 TB red wine vinegar
  • 1 TB lemon juice
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Combine all vegetables and set aside.
  2. Using a whisk, combine oil, vinegar, lemon juice, sugar, salt and pepper. Pour over vegetables and mix together.
