Pork and Polenta Skewers with Spicy Honey Sauce

Ingredients

  • 1 TB butter or oil
  • 1 tsp minced garlic
  • 2 cups chicken stock
  • 1/2 cup yellow cornmeal
  • Kosher salt and pepper to taste
  • 1 pound pork loin, cut into 1" pieces
  • 2-3 red bell peppers, large dice
  • 1/2 cup honey
  • 2 jalapeƱo, seeded and diced
  • 2 TB low sodium soy sauce
  • 2 TB cilanro, chopped

Instructions

  1. In a medium saucepan, warm oil over medium heat and add garlic. Saute without browning.
  2. Add stock and bring to a simmer.
  3. Stir in cornmeal and mix well. Turn heat to a low simmer.
  4. Add salt and pepper and cook until thick.
  5. Pour polenta into a cake pan or half baking sheet. Place in the refrigerator and allow to cool. When properly chilled, slice and prepare for skewers.
  6. Soak skewers in water at least 30 minutes before cooking. Thread skewers with pork, polenta and red bell pepper. Cook in an air fryer or oven at 375 F for 10 minutes or until pork reaches an internal temperature of 145 F.
  7. While pork is cooking, combine honey, minced peppers and soy sauce in a small sauce pan over medium heat. Reduce slightly and drizzle on skewers immediately after coming out of the oven.
  8. Garnish with chopped cilantro
