Pork and Polenta Skewers with Spicy Honey Sauce
Ingredients
- 1 TB butter or oil
- 1 tsp minced garlic
- 2 cups chicken stock
- 1/2 cup yellow cornmeal
- Kosher salt and pepper to taste
- 1 pound pork loin, cut into 1" pieces
- 2-3 red bell peppers, large dice
- 1/2 cup honey
- 2 jalapeƱo, seeded and diced
- 2 TB low sodium soy sauce
- 2 TB cilanro, chopped
Instructions
- In a medium saucepan, warm oil over medium heat and add garlic. Saute without browning.
- Add stock and bring to a simmer.
- Stir in cornmeal and mix well. Turn heat to a low simmer.
- Add salt and pepper and cook until thick.
- Pour polenta into a cake pan or half baking sheet. Place in the refrigerator and allow to cool. When properly chilled, slice and prepare for skewers.
- Soak skewers in water at least 30 minutes before cooking. Thread skewers with pork, polenta and red bell pepper. Cook in an air fryer or oven at 375 F for 10 minutes or until pork reaches an internal temperature of 145 F.
- While pork is cooking, combine honey, minced peppers and soy sauce in a small sauce pan over medium heat. Reduce slightly and drizzle on skewers immediately after coming out of the oven.
- Garnish with chopped cilantro
