5 Bean Salad
Ingredients
- 1 cup roasted peanuts
- 1 cup canned black beans, drained and rinsed
- 1 cup canned red kidney beans, drained and rinsed
- 1 cup frozen or fresh green beans, warmed and drained
- 1 cup shelled edamame
- 1/4 cup red onion, small dice
- 1/4 cup red bell pepper, small dice
- 1/4 cup peanut oil
- 1/4 cup white balsamic vinegar
- 1/2 tsp black pepper
- 1 tsp Kosher salt
Instructions
- Combine peanuts, black beans, red kidney beans, green beans, edamame, red onion and red bell pepper. Set aside.
- In a separate dish, whisk together peanut oil, white balsamic vinegar, pepper and salt.
- Add dressing to the bean mixture and stir until combined. Place in the refrigerator to marinate for at least 6-8 hours before serving. When ready to serve, stir and season to taste with additional salt or seasonings if needed.
