This week’s Foodie Friday post is inspired by a recent question from a reader. She and her husband typically serve both ham and prime rib at Easter, which leaves them with quite a bit of leftovers. She was curious about ways she could utilize leftover ham beyond ham salad or ham sandwiches.

Here are my thoughts…

  1. Cobb salad: Most likely you might have some leftover vegetables, hardboiled eggs and ham. You could do a simple cobb salad with eggs, cheese, ham, corn, green beans, tomatoes and salad greens.
  2. Ham & bean soup: You could easily do a ham & bean soup with split peas or even a ham & corn chowder if you have leftover mashed potatoes and corn.
  3. And finally…this Hawaiian BBQ Lavosh with Ham.

 

Lavosh bread is basically a large cracker crust. It’s similar to pizza in size but it will be very different in texture since it’s a very thin cracker crust that is pre-baked. I like the Lavosh bread especially because it’s a lot lower in calories and it’s actually pretty versatile.

 

 

Hawaiian BBQ Lavosh with Ham

Ingredients

  • 1 Lavosh cracker crust (comes in packs of 3, available in the deli section)
  • 1/2 cup BBQ sauce
  • 2 cups shredded mozzarella cheese or provolone mix
  • 1 red bell pepper, diced
  • 1 cup ham, diced into bite size pieces
  • 1/2 cup pineapple tidbits or freshly cut pineapple
  • 1/4 red onion, finely sliced

Instructions

  1. Preheat oven to 400 degrees.
  2. Start by covering the lavosh bread with a layer of BBQ sauce.
  3. Sprinkle cheese over the top and then layer with red peppers, ham, pineapple and red onion.
  4. Pro tip: My husband likes it when the onions are cooked and caramelized before placing on the lavosh. I admit, I think it’s pretty good too!!
  5. Bake on a pizza baking sheet for about 10 minutes or until cheese is melted and crust is beginning to brown.
