Ingredients

  • 1 cup roasted peanuts
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned red kidney beans, drained and rinsed
  • 1 cup frozen or fresh green beans, warmed and drained
  • 1 cup shelled edamame
  • 1/4 cup red onion, small dice
  • 1/4 cup red bell pepper, small dice
  • 1/4 cup peanut oil
  • 1/4 cup white balsamic vinegar
  • 1/2 tsp black pepper
  • 1 tsp Kosher salt

Instructions

  1. Combine peanuts, black beans, red kidney beans, green beans, edamame, red onion and red bell pepper. Set aside.
  2. In a separate dish, whisk together peanut oil, white balsamic vinegar, pepper and salt.
  3. Add dressing to the bean mixture and stir until combined. Place in the refrigerator to marinate for at least 6-8 hours before serving. When ready to serve, stir and season to taste with additional salt or seasonings if needed.
