Baked Beef Sliders with Chipotle Lime Mayo

Ingredients

  • 1.5 pounds ground beef
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 package (12) Hawaiian rolls
  • 6 slices sharp cheddar cheese
  • 1/2 cup mayonnaise
  • 1 TB lime juice
  • 2 chipotle peppers (from can with adobo sauce), finely minced
  • 1 teaspoon adobo sauce (use from can with chipotle peppers)
  • 1 TB butter (melted)
  • 1 TB sesame seeds

Instructions

  1. Preheat oven to 350 degrees
  2. In a bowl, combine ground beef, onion powder, garlic powder, salt and pepper. Mix until all ingredients are combined and place in a 9 x 11 baking dish. Press down to create an even layer across the pan. Place in oven and bake for 20 minutes.
  3. While beef is in the oven, prepare mayonnaise by combining mayonnaise, lime juice, chipotle peppers and adobo sauce. Mix well and set aside.
  4. Prepare sliders by slicing Hawaiian rolls in half and place the bottom layer in a separate baking dish with a fine layer of cooking spray.Spread a light layer of the chipotle mayonnaise on the bottom half of the sliced rolls.
  5. When beef has finished baking, remove from oven and remove from pan, draining excess grease.
  6. Place beef layer on top of the Hawaiian rolls. Add sharp cheddar cheese slices and secure the top portion of the Hawaiian rolls. Top with melted butter and sprinkle with sesame seeds. Bake for an additional 20-25 minutes.
