1.5 pound boneless skinless chicken breasts (cut into 4 oz portions)
1 green pepper
1 red bell pepper
1 yellow red pepper
1 orange red pepper
1 sweet onion
1/2 tsp salt
2 tsp pepper
4 TB olive oil (infused with lime if you can find it, otherwise just use the juice from a lime)
2 tsp garlic powder
6 Sandwich Thin Buns- Whole Wheat, 100 calorie
-4 hours before you grill, place chicken in ziplock bag with 2 TB lime infused garlic olive oil, 1 tsp of pepper, and 1 tsp of garlic powder. Make sure chicken is coated with mixture and place back in refrigerator until time to grill.
For fajita mixture: slice peppers and onion in strips and combine with salt, 2 TB lime infused garlic oil, 1 tsp of pepper, and 1 tsp of garlic and mix together. Make sure the peppers are coated with the oil and seasoning.
Place both chicken and peppers on grill and cook until done.
Serve with salsa, avocado slices, or light sour cream if desired.
