Chocolate Mousse
Ingredients
- 1 (14 oz) can light coconut milk
- 1 package semi sweet chocolate chips
Instructions
- Melt chocolate chips for 1 minute, stir and return to the microwave for another 15-30 seconds until chocolate is melted.
- In a blender, combine melted chocolate with coconut milk until well mixed.
- Pour in individual ramekin dishes or place in a small cake pan. (Optional: crush oreo chocolate cookies and place in the bottom of pan for the crust.)
- Serve with fresh strawberries and whipped cream.
