Cilantro Lime Chicken Tacos

Ingredients

  • 12 Corn Tortillas
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 lb Boneless Skinless Chicken Breast
  • 1 medium chopped white onion
  • 1/4 cup chopped cilantro
  • 2 large garlic cloves finely chopped
  • 1 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/3 cup lime juice
  • 1 red bell pepper
  • 2 avocados

Instructions

  1. Heat oil in large pan over medium-high heat. Add chicken and cook for 3-5 minutes.
  2. Then add onion, cilantro and garlic to the pan and cook an additional 3-5 minutes.
  3. Combine cumin, salt, and lime juice in a separate dish and then pour on top of chicken. Bring to a simmer and let cook for another 15-20 minutes or until chicken is fully cooked.
  4. Remove chicken from pan and let cool. Once chicken has cooled, shred the chicken and place in corn tortilla shells. Serve with fresh lime and top with chopped red bell pepper and avocado slices.
