Fruit Parfait with Soy Cream
Ingredients
- 1 BlueBerry Soy Joy Bar
- 1/2 cup Blueberries
- 1/2 cup Strawberries
- 6 oz Firm Silken Tofu
- 2 TB Vanilla Soy Milk
- 1 TB Sugar
- 1/2 teaspoon Vanilla extract
Instructions
- Using a food processor, grind up soy joy bar into crumbles. Set aside.
- To prepare the cream: combine tofu, soy milk, sugar, and vanilla in food processor and blend until smooth.
- Build mini parfaits by adding 1 tsp of soy joy crumbles to the bottom of year dish. Then add both kinds of fruit to parfait dishes reserving some fruit for the top. Then layer with 3 TB of cream. Top with remaining soy joy crumbles and fruit.
