Fruit Parfait with Soy Cream

Ingredients

  • 1 BlueBerry Soy Joy Bar
  • 1/2 cup Blueberries
  • 1/2 cup Strawberries
  • 6 oz Firm Silken Tofu
  • 2 TB Vanilla Soy Milk
  • 1 TB Sugar
  • 1/2 teaspoon Vanilla extract

Instructions

  1. Using a food processor, grind up soy joy bar into crumbles. Set aside.
  2. To prepare the cream: combine tofu, soy milk, sugar, and vanilla in food processor and blend until smooth.
  3. Build mini parfaits by adding 1 tsp of soy joy crumbles to the bottom of year dish. Then add both kinds of fruit to parfait dishes reserving some fruit for the top. Then layer with 3 TB of cream. Top with remaining soy joy crumbles and fruit.
