Ingredients

  • 1 cup shredded romaine lettuce
  • 1 cup cherry tomatoes (cut in half)
  • 1 cup yellow pepper, diced
  • 1 cup hard boiled egg, diced
  • 1 cup sharp cheddar cheese, grated
  • 1 cup carrots, shredded
  • 1 cup edamame
  • 1 cup grilled chicken, cubed
  • 1 cup corn
  • 1 cup red cabbage, shredded

Instructions

  1. Grill chicken ahead of time and then set aside to cool. (Tip: I like to cook items like grilled chicken in batches and then freeze. It makes it easy to use for dishes like this)
  2. Combine all ingredients together and enjoy with your favorite dressing.
