Pecan Honey Glazed Carrots
Ingredients
- 1 lb coined or oblique-cut carrots
- 1 TB minced shallot
- 2 TB honey
- 1/3 cup chopped pecans
- Kosher salt and white pepper to taste
Instructions
- Add carrots to a large sauté pan and fill with enough water to barely cover carrots. Bring water to a simmer over medium high heat and cook carrots until tender. Drain the water from the carrots but reserve the cooking liquid.
- Return carrots to the pan and over low-medium heat, add shallots, honey and pecans. Add 2-3 tablespoons of the cooking liquid to help create a glaze for the carrots.
- Combine all ingredients until the carrots are coated evenly. Season to taste with Kosher salt and white pepper and serve immediately.
