Peppermint Chocolate Coffee Cupcakes

Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 3/4 cup cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 tsp espresso powder
  • 2 eggs
  • 1/2 cup oil
  • 1 cup milk
  • 1 tsp peppermint extract
  • 1 cup boiling water
  • 8 oz cream cheese
  • 3 cups powdered sugar
  • 1 tsp peppermint extract

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine all dry ingredients, mix until just combined
  3. Add eggs, oil, milk, and extract into the mixer. Mix for 30 seconds.
  4. Add boiling water, mix on high for 1 minute.
  5. Portion into cupcake pan with liners in place first. Fill 2/3 of the way up.
  6. Bake for 20 minutes or until toothpick comes out clean.
  7. While cupcakes are baking, in a mixer with paddle attachment, mix 8 oz cream cheese.
  8. Mixing on low add 1/4 cup of powdered sugar at a time. after each full cup, mix on high 30 seconds.
  9. Once third cup is added, add peppermint extract, mix until fluffy, if too thick you can thin with 1 Tbsp of water at a time until desired consistency.
  10. Frost cupcakes once cooled.
