Roasted Red Potato Nachos with Blue Cheese

  • 8-10 Small-Medium Red Potatoes, sliced
  • 1 Red Bell Pepper, diced
  • Trader Joes 21 Season Salute or Black Pepper
  • 1 container blue cheese (usually 4-5 oz)
  • 1 cup diced green onions
  • Olive Oil, as needed


  1. Preheat oven to 425
  2. Grease baking sheet with olive oil and give the potatoes a nice coating.
  3. Add the diced red bell pepper to the pan and also make sure they have been coated with olive oil and then season with Trader Joes 21 Season Salute. If you don’t have that, then just use black pepper or a little garlic powder. (I try not to salt the potatoes because the blue cheese has plenty of salt! )
  4. Place in the oven and bake for 35-40 minutes. You might have to extend the cooking time depending on your oven and the desired crispness.
  5. Once the potatoes are done, remove from oven and sprinkle with blue and diced green onion.
  6. Serve and enjoy!
