Sautéed Green Beans with lemon, garlic and shallots

Ingredients

  • 12 oz trimmed fresh green beans
  • 1 TB vegetable oil
  • 1 TB minced shallot
  • 1 tsp minced garlic
  • 1 TB lemon juice
  • Kosher salt and black pepper

Instructions

  1. Blanch green beans by placing in boiling water for 1 minute, drain and place in an ice water bath.
  2. Using a sauté pan, add vegetable oil and warm over medium high heat. Once oil is hot, add shallot and cook for 30-45 seconds making sure to not burn.
  3. Add green beans and sauté for 2-3 minutes.
  4. Add garlic and cook an additional 1-2 minutes until beans are tender
  5. Season to taste with lemon juice, Kosher salt and black pepper.
