Shortbread “Biscuits”
Ingredients
- 1 cup or 2 sticks salted butter (room temperature)
- 3/4 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups AP flour (sifted)
Instructions
- Using a standing mixer with a paddle attachment, add butter and beat for 1-2 minutes on medium speed.
- Stop mixer and add powered sugar. Beat an additional 1-2 minutes on medium speed, scraping the sides of the bowl when needed.
- Add vanilla and beat until incorporated into sugar and butter.
- Stop mixer and add sifted flour. Start on a lower speed and eventually increase until the dough starts to take shape.
- Line an 8 X 8 baking dish with parchment paper and spray with a non cooking spray.
- Spread dough into baking dish and place in the refrigerator for 30 minutes. Meanwhile, preheat oven to 300 degrees while dough is chilling.
- Bake for 55 minutes at 300 degrees.
