Shortbread “Biscuits”

  • 1 cup or 2 sticks salted butter (room temperature)
  • 3/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups AP flour (sifted)


  1. Using a standing mixer with a paddle attachment, add butter and beat for 1-2 minutes on medium speed.
  2. Stop mixer and add powered sugar. Beat an additional 1-2 minutes on medium speed, scraping the sides of the bowl when needed.
  3. Add vanilla and beat until incorporated into sugar and butter.
  4. Stop mixer and add sifted flour. Start on a lower speed and eventually increase until the dough starts to take shape.
  5. Line an 8 X 8 baking dish with parchment paper and spray with a non cooking spray.
  6. Spread dough into baking dish and place in the refrigerator for 30 minutes. Meanwhile, preheat oven to 300 degrees while dough is chilling.
  7. Bake for 55 minutes at 300 degrees.
