Strawberry Chia Seed Salad

Ingredients

  • Dressing:
  • 1/4 cup Red Wine Vinegar
  • 1/4 cup White Vinegar
  • 1/4 cup extra virgin olive oil
  • 1 cup sliced strawberries
  • 1/8 red onion
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 Tablespoon agave nectar
  • 1 Tablespoon chia seeds
  • Yields about 21 Tablespoons, Serving: 3 Tablespoons
  • Salad (1 Person):
  • 2 cups baby spinach
  • 1/2 cup blueberries
  • 1/2 cup sliced strawberries
  • 1/4 cup pineapple chunks
  • 1 Tablespoon walnuts

Instructions

  1. Combine all salad ingredients and set aside.
  2. For dressing, using a food processor or hand blender, mix together red wine vinegar, white vinegar, olive oil, strawberries, red onion, garlic powder, salt, and agave nectar. Blend until smooth and then stir in chia seeds.Yields about 1 and 1/3 cup. A serving for each person should be about 3-4 Tablespoons. You can mix up and then store in the refrigerator for a couple of days.
