Yields about 21 Tablespoons, Serving: 3 Tablespoons
Salad (1 Person):
2 cups baby spinach
1/2 cup blueberries
1/2 cup sliced strawberries
1/4 cup pineapple chunks
1 Tablespoon walnuts
Combine all salad ingredients and set aside.
For dressing, using a food processor or hand blender, mix together red wine vinegar, white vinegar, olive oil, strawberries, red onion, garlic powder, salt, and agave nectar. Blend until smooth and then stir in chia seeds.Yields about 1 and 1/3 cup. A serving for each person should be about 3-4 Tablespoons. You can mix up and then store in the refrigerator for a couple of days.
