Strawberry Cobbler
Ingredients
- 2 pounds strawberries, cleaned and cut into quarters
- 1/2 cup white sugar + 2 TB
- 1 TB cornstarch
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 stick unsalted cold butter, cut into small pieces
- 3/4 cup heavy cream
Instructions
- Preheat oven to 375 F
- Lightly grease a 8 x 11.5 " pan
- Combine strawberries, 1/4 cup sugar and cornstarch. Set aside.
- Combine flour, baking powder, salt and remaining sugar. Cut in butter so that dough becomes pea sized. Then gently fold in heavy cream to create the topping mixture. Set aside.
- Pour strawberry mixture into baking dish and top with dough mixture.
- Dust the dough topping with 2 TB sugar.
- Bake for 35-40 minutes until crust is gold & bubbly.
