This is the perfect recipe to celebrate soyfoods month as it includes edamame and black soy beans. Chances are good that your grocery store might carry black soy beans in the health section. If you can’t find them, be sure to ask! For the dressing, I used red wine vinegar. You could you use red wine vinaigrette dressing instead. Although if you’re concerned about sodium or have issues with your blood pressure, stick with the red wine vinegar. I love this recipe not only because it’s easy, but it’s also colorful and full of great nutrition as soyfoods are high in fiber and protein, low in saturated fat, and cholesterol free. This would be a perfect side dish for Easter dinner!
