This weekend I had the opportunity to do a recipe demo with the Nebraska Soybean Board at a local grocery store and I made this 3 bean salad using edamame, black soy beans, and garbanzo beans. It was so delicious that I had to share the recipe with the rest of you! I even took a vine video to show you just how easy it is to make….
This is the perfect recipe to celebrate soyfoods month as it includes edamame and black soy beans. Chances are good that your grocery store might carry black soy beans in the health section. If you can’t find them, be sure to ask! For the dressing, I used red wine vinegar. You could you use red wine vinaigrette dressing instead. Although if you’re concerned about sodium or have issues with your blood pressure, stick with the red wine vinegar. I love this recipe not only because it’s easy, but it’s also colorful and full of great nutrition as soyfoods are high in fiber and protein, low in saturated fat, and cholesterol free. This would be a perfect side dish for Easter dinner!
Special thanks to the Nebraska Soybean Board & the Bean Team for sharing this recipe!
