Today my niece and nephews celebrated their last day of school and we celebrated big time. I have 10 nieces & nephews and 3 of them live in the same city as my husband & I. I adore these kids and I can’t wait to spend more time with them this summer. I don’t get to spend a ton of time with them throughout the school year because their parents are divorced, but summertime is always great as they get uninterrupted time with their father, which allows me to see them when I want. This past weekend my nieces and nephew from Oklahoma came for a visit, and we took all 6 of them to see Wicked in Omaha. It was such a fun experience getting to share my love of music and theater with them.
In addition to spending time with my nieces and nephews, the only thing that can make this week any better is stuffing my face with edamame hummus. Am I right? Ever since I made white bean & basil hummus last week, I’ve been on a kick with hummus. This time I used edamame (shelled soybeans) instead of garbanzo beans, because blended edamame is full of flavor and it’s green. How wicked is that?
As you can tell, I really enjoy cooking and I really like easy recipes. This is another recipe where you could keep the ingredients on hand, and then prepare when needed. Frozen shelled edamame is a freezer must have! I served on bread for this photo, but you could easily serve with fresh veggies, whole grain crackers, or pita chips.
