Avocado Chopped Salad
Ingredients
- 1 avocado, cored, peeled and diced
- 1 cup red bell pepper, chopped
- 1 cup orange or yellow bell pepper, chopped
- 1 cup cucumber, small dice
- 1 cup zucchini, small dice
- 1 cup tomato, small dice
- 2 TB fresh parsley, minced
- 2 green onions, finely chopped
- 2 TB canola or olive oil
- 1 TB red wine vinegar
- 1 TB lemon juice
- 1/2 tsp sugar
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Combine all vegetables and set aside.
- Using a whisk, combine oil, vinegar, lemon juice, sugar, salt and pepper. Pour over vegetables and mix together.
