Well friends, today is the day.
The day that the Huskers play in the NCAA for the first time in 16 years. Since I’ll be watching basketball pretty much all weekend, I wanted to have some healthy game day snacks on hand. Even though it’s March madness, it’s also National Nutrition Month and I’m celebrating both! These panko chicken tenders served with this cauliflower (faux blue cheese) dip are definitely on the menu.
I also think it’s appropriate that these chicken tenders are paired with a faux blue cheese cauliflower dip. (Warning: There is absolutely no blue cheese in this dip, sorry not sorry) Why? Ok, this is a really long story but the chicken tenders are dipped in a mixture of hot sauce (color = red) and served with a dip that has no real blue (color = blue) cheese in the recipe. So I’m combining something red with something blue. See what I did there? Well, if you’re not from Nebraska then you probably wouldn’t get it. There are actually 2 teams from Nebraska headed to the NCAA. The Huskers and the Creighton Bluejays.
Even though I bleed HUSKER red, I will still cheer for Creighton today. The crazy thing is that if the Huskers win this round, then we might meet Creighton in the next round. In that case, I will not be cheering for Creighton. Sorry Doug.
By the way, did you catch that these are coated with Panko bread crumbs? Yeah, I did that on purpose too. Panko for Pankonin? Ok…I’ll just stop now.
