This might be my favorite recipe for the summer.

Peach Salsa -12

I have a friend that runs a local non-profit for a program called Parent Life.

“The parent Life program gives hope to expecting and parenting teens. The positive sign on a pregnancy test is a dark and scary place for any middle school or high school student. Parent Life comes alongside these students and their children to let them know they are not alone.

Our goal is to assist teen parents in the transition from being teenagers to becoming responsible, caring parents who are equipped to work toward their life goals. We provide guidance through educational, social, and spiritual resources designed to meet their specific needs.”

So, every summer they sell Colorado peaches as a fundraiser to help support this program. He reached out and asked if I had any peach recipes on my blog that could be handed out with the peaches. This might come as a shocker, but I don’t have any peach recipes on my blog.

So, I told him that I would be happy to develop one because…

2. It’s for a great cause.

My intern helped develop this recipe and it’s definitely a keeper! It pairs really well with tortilla chips, cinnamon chips, or over grilled chicken or salmon.

Peach Salsa

  • 20 minutes
  • 12 ingredients
  • 1 steps

Ingredients

  • 3 peaches (halved, pitted, and diced)
  • 1 mango (peeled, seeded and diced)
  • 1 cup canned pineapple tidbits
  • 4 tomatoes, chopped
  • 1 medium white onion, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 jalapeno pepper (seeded and diced)
  • 1 clove garlic, minced
  • 1/2 cup fresh cilantro, chopped
  • 2 small limes (juice only)
  • 1 tsp salt

Instructions

  1. Combine all ingredients and refrigerate for 1 hour. Serve with tortilla chips or over grilled chicken.
