Did you know October is pork month? As a Chef, I really enjoy pork this time of year as smoked pulled pork is one of my favorite foods at tailgate events and fall parties. I wanted to see if I use pork tenderloin in a similar way as I really enjoy the texture of pulled pork that typically uses pork shoulder. It turns out, you can!

Plus both pork tenderloin and pork sirloin roast are considered extra lean and meet the American Heart Association requirements for its Heart-Check Food Certification Program. You can read more about that here. Enjoy!

 

Pressure Cooker Pork Loin Street Tacos

Ingredients

  • 1.5 lb pork loin (purchase as pork loin filet)
  • 1 TB Veg oil
  • 1 cup chicken broth
  • 1/2 cup orange juice or lime juice
  • 2 tsp fresh garlic, minced
  • 1 tsp dried oregano
  • 1 tsp chili powder
  • 1 tsp cumin
  • 12-15 corn street taco tortillas
  • Optional garnishes: Fresh cilantro, Sliced jalapeños, Queso fresco crumbles, Sliced radishes, Diced pineapple and Lime wedges

Instructions

  1. Slice pork filet into medallion pieces, about 1 inch thick. Season both sides with kosher salt and pepper. Using a pressure cooker with a sauté function, warm 1 TB oil over medium high heat. (You could also do in a saute pan instead of instant pot if desired.)When the oil is hot, add pork and sear pieces on each side.
  2. Once pork has been seared on both sides, add chicken broth, orange juice, garlic, oregano, chili powder and cumin to pressure cooker along with your seared pork. Using the pressure cooker setting, pressure cook the ingredients for 8-10 minutes. Once the pressure cooker has finished, do a quick release to let out the steam. (Remaining juice can be discarded or made into a sauce by using the sauté function on the pressure cooker and reducing until thickened.) Remove pork from the chamber and shred with two forks.
  3. Serve shredded pork loin over corn tortillas and top with garnishes of choice.
