Ingredients

  • 1 cup shelled edamame
  • 1 cup cherry tomatoes, cut in half
  • 1 cup cherry yellow tomatoes, cut in half
  • 2 TB chopped parsley
  • 1/4 cup green onion, chopped
  • 2 TB Basil, chopped
  • Juice and Zest of 1 lime
  • 1 TB vegetable oil
  • 2 cups grilled corn, cut in small sections off the cob
  • Kosher salt and pepper to taste

Instructions

  1. Combine all ingredients and season well with Kosher salt and pepper.
