Balsamic Strawberries with Ricotta Cream from Stirlist.com

Since my Monday post about being fed up with the blame game might have tasted a little sour, I figured that I should probably give you something sweet to look at today.

Not that I’m apologizing, because I’m not.

I believe you should go bold or go home. Otherwise, why bother? I’m not going to pretend to be something I’m not. I’m sweet & sassy so there you have it. Kind of like this amazing cup of deliciousness you see before you….

This isn’t just any cream or your average cup of strawberries. These strawberries took a bath in white balsamic vinegar and this cream was made using cream cheese mixed with skim ricotta cheese and topped with blueberries.  The bold flavor of the balsamic vinegar mixed with the vanilla cream mixture is the perfect blend of sweet & sour.

Eating cream with strawberries and blueberries makes me feel very distinguished. It makes me want to read Pride and Prejudice or Sense and Sensibility and imagine myself like one of the Bennet sisters. By the way, I know you all think Mr. Darcy is the best, but he really doesn’t compare to Colonel Brandon from Sense and Sensibility. I think his character is the perfect blend of boldness and sweetness, which are two qualities that every man should possess. Team Colonel Brandon for the win!

Apparently many of you appreciated my post from Monday and I’m extremely grateful to you for your kind comments and for sharing. I am humbled, and I think it’s great that so many of you took time to write emails, call, text, or tweet in agreement.  I really do have some fantastic friends, colleagues, and fans, so thank you!

Last night I had dinner with a respected colleague that I’ve looked up to for quite some time. It was encouraging to hear him tell me that he was proud of my boldness for supporting research and not succumbing to popular opinion or the nutrition gospel according to Dr. Oz. He’s been in the field long enough to understand that this problem is worse than ever because of all the misinformation out there. I think it can be easy to get confused, which is why I think it’s important to surround yourself with people who are smarter than yourself and seek out experts in their field. I’m grateful that I’ve found some amazing colleagues, friends, and family who have played a significant role in my life. That’s how we grow and that’s how we learn so be brave enough to listen, even if you might not agree.

Considering that Independence day is right around the corner, I’m glad that I can publish a post like I did on Monday and have the freedom to say what I want to say. (Thanks to a little encouragement from Sara Bareilles.) Trust me, I had to play that song about a million times before I hit publish.

Balsamic Strawberries with Ricotta Cream

  • 15 minutes
  • 8 ingredients
  • 3 steps

Ingredients

  • 1 package reduced fat cream cheese
  • 1 container part skim ricotta cheese (1.5 cups)
  • 4 TB powered sugar
  • 1 Teaspoon Vanilla Extract
  • 2 pints strawberries
  • 3 Tablespoons White Balsamic Vinegar
  • 2 Tablespoons Powered Sugar
  • 1 pint blueberries

Instructions

  1. Whip ricotta cheese, cream cheese, powdered sugar and vanilla extract in a bowl using an electric mixer.
  2. Combine while balsamic vinegar and remaining powdered sugar and pour on sliced strawberries. Make sure balsamic vinegar and sugar mixture coats all the strawberries.
  3. Divide into serving dishes and layer with strawberries, cream, and top with blueberries
