This week’s Foodie Friday post is inspired by a recent question from a reader. She and her husband typically serve both ham and prime rib at Easter, which leaves them with quite a bit of leftovers. She was curious about ways she could utilize leftover ham beyond ham salad or ham sandwiches.
Here are my thoughts…
- Cobb salad: Most likely you might have some leftover vegetables, hardboiled eggs and ham. You could do a simple cobb salad with eggs, cheese, ham, corn, green beans, tomatoes and salad greens.
- Ham & bean soup: You could easily do a ham & bean soup with split peas or even a ham & corn chowder if you have leftover mashed potatoes and corn.
- And finally…this Hawaiian BBQ Lavosh with Ham.
Lavosh bread is basically a large cracker crust. It’s similar to pizza in size but it will be very different in texture since it’s a very thin cracker crust that is pre-baked. I like the Lavosh bread especially because it’s a lot lower in calories and it’s actually pretty versatile.
