In honor of April being Soyfoods month, I decided to make these yummy little fruit parfaits with soy cream. As many of you know, I have been working with the Nebraska Soybean Board this year teaching others about soy and the many health benefits. And If you live in Nebraska, you’ve probably heard my voice on the radio telling you to “Eat Well, Eat Soy!” I actually had a ton of fun doing the talent for those commercials and I have loved taping the Cooking With Soy segments. I am so honored to be able to work with such a great organization and help promote soybean farmers across the state.
I also love being able to sample all the different soy products! My favorite soy food is probably edamame. I love the tender, nutty flavor! It makes a great low calorie appetizer. I remember when my husband and I lived in DC our first year of marriage, we would go out for sushi and order edamame because it was the cheapest thing on the menu. We would fill up on edamame and split an order of sushi because we couldn’t really afford much else. Hahaha!
I also can’t believe how many options there are now for soy! In addition to edamame, there are now soy beverages, soy nuts, tofu, soy flour, and black soy beans to name a few! It’s incredibly versatile and you can use soy foods in so many recipes. I also love the nutrition profile of soy. It’s one of the few plant proteins that contains all nine essential amino acids, zero saturated fat, it’s cholesterol free, and it contains fiber. What soyfoods will you try this month?
