Can you believe that the Holidays are here? As a full time educator and personal chef, this is an extremely busy time year for me as I’m entering grades, finishing market orders and making sure my clients are taken care of. Knowing that many of us are juggling a lot right now, I wanted to make something that could satisfy my sweet tooth without being too high in sugar or taking too much time to prepare. That’s why this Peanut Butter Tart is perfect as it contains one of my favorite superfoods (PEANUTS!) and it doesn’t even require baking!

If you’ve been following me on social media, you know I’m a huge fan of peanuts. Peanuts are a superfood packed with plant-based protein and 19 vitamins & minerals. Peanuts are affordable and versatile in the ways that you can prepare and cook with them. In fact, 1 oz of peanuts contains about 7 grams of plant-based protein and costs about 14-16 cents. Peanuts can also give your brain a boost! According to this study, peanuts and peanut butter may help support memory and cognition, which is especially important this time of year!

Peanut Butter Tart with Chocolate Peanut Crust

Ingredients

  • 1 Cup Medjool Dates, seeds removed
  • 1 cup peanuts, unsalted
  • 1/3 cup cocoa powder
  • 2 Tbsp brown sugar
  • 3 Tbsp water
  • 4 oz cream cheese, softened
  • 1 cup creamy peanut butter
  • 1/2 cup Greek yogurt
  • 1/2 tsp vanilla
  • 1/4 cup butter, softened.
  • 2 Tbsp brown sugar

Instructions

  1. Combine the dates and peanuts in food processor and blend into small pieces.
  2. Add cocoa powder, 2 TB brown sugar, and water into food processor and blend until it takes a dough form.
  3. Press crust into the base of a pie tin, working up the edges as you would for any pie.
  4. Place crust in freezer while you combine filling
  5. For pie filling, combine remaining ingredients in the food processor or mixer. Make sure cream cheese and butter is completely softened before mixing.
  6. Blend until all ingredients are incorporated and creamy.
  7. Fill pie crust with the filling, smoothing out the top.
  8. Garnish with chopped peanuts or candied peanuts and sprinkles if desired.
  9. Refrigerate until set. Serve cold.
