Need a quick appetizer to bring to the tailgate or fall office party? Look no further, you’ve got this. This recipe was inspired by my recent trip to Colorado with my family. Apparently this is one of my brother’s new favorite recipes and he shared it with my mom, who had to share it me, and now I get to share it with you! Ha ha!

Roasted Red Pepper Dip from Stirlist.com

This is a 3 layer dip with light cream cheese on the bottom (you could use goat cheese if you wanted), followed by a layer of pesto, and topped with diced roasted red peppers. You can either eat it cold or if you want a party in your mouth, stick it in the oven or microwave. It’s really good served hot!

Roasted Red Pepper Dip

Ingredients

  • 8 oz light cream cheese or goat cheese
  • 4 TB prepared pesto (I use the one from Trader Joes)
  • 1 12 oz jar Fire Roasted Red Peppers from Trader Joes- diced

Instructions

  1. In a small dish, start by spreading out the block of cream cheese. Then layer with pesto and topped with diced roasted red peppers. Microwave for 4 minutes or bake in the oven for 20 minutes at 350.
