Fall is officially here and I am here for it. I’m also here to share some really exciting news about peanuts!

Last month there was research published online in Clinical Nutrition showing that consumption of peanuts and peanut butter may improve cognitive function and reduce stress in healthy young adults. Peanuts contain both polyphenols and bioactive compounds like resveratrol, niacin and vitamin E which can help contribute to cognition and mental health.

As a college instructor, I know this is something that could really benefit the students I work with on a daily basis. Not only do peanuts contain nutrients helpful for memory and mental health, peanuts are also affordable and can be enjoyed in so many different ways.

With classes, homework and job commitments, college students can have a hard time getting a balanced meal into their day. This recipe can be prepared in under 20 minutes and is easily customizable by subbing your favorite veggies and adjusting the spice level for your liking. Another bonus, it is affordable!

Spicy Peanut Ramen

Ingredients

  • 1 (3oz.) package ramen
  • 1 Tbsp shallot, diced
  • 2 tsp minced garlic
  • 1/2 cup shredded carrot
  • 1/2 cup sliced mushrooms
  • 1/2 cup coleslaw blend or chopped broccoli florets
  • 1/2 cup finely sliced red pepper (cut into strips)
  • 1/4 cup peanut butter
  • 1/2 cup - 2/3 cup water
  • 1 TB soy sauce
  • 1 TB brown sugar
  • 1 Tbsp Sriracha
  • 1/4 cup roasted peanuts, chopped
  • 1 Tbsp Cilantro, for garnish

Instructions

  1. Cook ramen according to package directions. Strain noodles and set aside.
  2. In a medium sauté pan, warm 1 TB of oil over medium high heat. Add shallot and garlic and cook until aromatic.
  3. Add mushrooms to pan, sauté until tender.
  4. Combine carrots, broccoli and red pepper into the pan and sauté about 2 minutes. Remove veg from the pan.
  5. Combine water, peanut butter, soy sauce, brown sugar and Sriracha into the pan. Simmer and reduce until sauce is thickened, about 2 minutes.
  6. Top the ramen noodles with the sauce and combine well. Top with vegetables, chopped peanuts, and cilantro.
