Summer Succotash with Edamame and Grilled Corn
Ingredients
- 1 cup shelled edamame
- 1 cup cherry tomatoes, cut in half
- 1 cup cherry yellow tomatoes, cut in half
- 2 TB chopped parsley
- 1/4 cup green onion, chopped
- 2 TB Basil, chopped
- Juice and Zest of 1 lime
- 1 TB vegetable oil
- 2 cups grilled corn, cut in small sections off the cob
- Kosher salt and pepper to taste
Instructions
- Combine all ingredients and season well with Kosher salt and pepper.
