Today I’m sharing some fan favorite recipes that are perfect for your next tailgating or sporting event! Growing up in Nebraska, Saturdays typically revolve around food and football. Whether it’s attending the games or the parties before or after the game, tailgating really is a sport in and of itself!

When The Peanut Institute asked me about what peanut foods I might find at a tailgate in Nebraska, there were 2 foods that came to mind. Puppy Chow and Peanut Butter Burgers.

Puppy Chow really is a fan favorite considering it’s a sweet and crunchy mix that combines 2 of my favorite foods, chocolate and peanut butter! You can make it ahead of time and it travels well especially if you need a quick dessert to serve on a football Saturday!

Another local fan favorite and personal favorite are peanut butter burgers. Trust me, you haven’t lived unless you’ve had peanut butter on a burger. I remember the first time I had peanut butter on a burger was at a local bar & grill fairly close to Memorial Stadium in Lincoln, NE. This place was a local dive bar and was known for it’s unique burgers. So, when I think of peanuts and fan favorites, using peanut butter on a burger is a must! This recipe is actually a peanut butter jelly slider with a twist. The slider bun is a pretzel bun and the meat used is 100% lean ground beef topped with chunky peanut butter, sharp white cheddar, bacon jam and lettuce.

Yes, the “jelly” is actually a bacon jam that compliments the peanut butter perfectly! I really love sliders as the serving size feels really satisfying and not over the top. Also, the combination of the pretzel bun with the chunky peanut butter and bacon jam is really fantastic.

Easy Puppy Chow

Ingredients

  • 2 cups semi chocolate chips
  • 1 stick salted butter
  • 1 cup creamy peanut butter
  • 1 (12 oz) box Chex cereal
  • 3.5 cups powdered sugar

Instructions

  1. Using a double boiler, melt chocolate until smooth and add butter and peanut butter.
  2. Pour mixture over rice cereal and gently combine until mixed.
  3. Coat with powered sugar and serve.

Peanut Butter & Jelly Sliders

Ingredients

  • 2.5 lb lean ground beef
  • 1 cup chunky peanut butter
  • 1 package Kings Hawaiian Pretzel Slider Buns (12)
  • 1 cup bacon jam
  • 12 slices Extra Sharp White Cheddar
  • 1 head leaf lettuce

Instructions

  1. Portion ground beef into 3 oz patties. Set aside.
  2. Preheat grill and once grill is hot, cook sliders until 160 F, about 3-4 minutes on each side, flipping once.
  3. When meat is almost done, add sharp cheddar on top and allow to melt. Remove from grill and place directly on slider bottom.
  4. Prepare slider buns by topping each side of the bun with 2-3 teaspoons of chunky peanut butter.
  5. Place slider on bottom slider and top with 1 TB of bacon jam and lettuce. Top with slider bun and secure with skewer. Serve immediately.

Bacon Jam

Ingredients

  • 1 lb Bacon, (Thick cut) chopped
  • 1 small yellow onion, small dice
  • 3 shallots, sliced thin
  • 1/2 cup brown sugar
  • 1/2 cup maple syrup
  • 1/2 brewed coffee
  • 1/2 cup apple cider vinegar
  • 1/2 tsp red pepper flakes

Instructions

  1. Preheat a dutch oven or stock pot over medium heat. Add chopped bacon and cook, stirring often. When the bacon has rendered and starting to crisp, remove the bacon with a slotted spoon and drain on paper towels.
  2. Discard bacon fat but reserve 1 TB. To the same pot or dutch oven, return to low-medium heat and add onion and shallots. Cook and stir occasionally for about 20 minutes or until onions are caramelized.
  3. Add bacon back to the pan and add sugar, syrup, coffee, vinegar and red pepper flakes. Bring the mixture to a simmer and cook until most of the liquid is gone, about 1 hour. Store in refrigerator.
