Happy Heart Month, Friends!

Today I’ve partnered with The Peanut Institute to bring you this delicious recipe for Peanut Butter Chocolate Chip Scones. Inspired by my love for peanuts and Valentine’s Day, I thought this would be the perfect recipe to share with your family or sweetheart.

Did you know that peanuts are among the list of foods certified by the American Heart Association as a heart-healthy food? The American Heart Association recommends a heart healthy diet that includes a variety of nuts, fruits, vegetables, whole grains, and other healthy foods including peanuts! So, if you love peanuts, this is great news because just a handful of peanuts provides 7 grams of protein and 19 vitamins and minerals. Research has shown that regular consumption of peanuts can help reduce the risk of chronic diseases like diabetes, heart disease and cancer. In fact, peanuts contain magnesium and potassium—two minerals that help control your blood pressure.

Now about this recipe…

One of my favorite food combinations is peanut butter and chocolate, so I couldn’t help but bring these two together. And if you haven’t figured it out, I love breakfast food. Plus, I think it’s much more romantic to make somebody breakfast in bed instead of going out for a Valentine’s dinner at a busy restaurant, but that’s just me.

And that’s not all! Today I’m giving away an amazing gift basket from The Peanut Institute filled with peanut products!

Peanut Butter Chocolate Chip Scones

  • 35 minutes
  • 10 ingredients
  • 6 steps

Ingredients

  • 2 cups all purpose flour
  • 1 TB baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cut into small pieces
  • 1/2 cup chunky peanut butter
  • 1/2 cup sugar
  • 4 oz low fat buttermilk
  • 1 egg
  • t tsp vanilla extract
  • 1 cup chocolate chunks

Instructions

  1. Preheat the oven to 375. Line a large baking sheet with parchment paper.
  2. Combine the all-purpose flour, baking powder and salt in a bowl.
  3. Add the butter to the flour mixture and cut in with a pastry blender until the mixture resembles coarse crumbs. Do not over mix.
  4. In a separate mixing bowl, combine peanut butter, sugar, buttermilk, egg and vanilla extract. Stir the wet mixture into the flour mixture, add chocolate chunks and combine just moistened without overmixing.
  5. With lightly floured hands, knead the dough in the bowl until it comes together and transfer it to the prepared baking sheet. Press the dough into an 8-inch diameter disk and cut it in 8 wedges or make mini scones by dividing the dough in half and cutting into 8 equal pieces with each half. If desired, brush the top of the wedges with additional buttermilk and sprinkle with sugar.
  6. Bake about 18-20 minutes. Remove from the oven and transfer to a wire rack.
