Happy June Dairy Month, Friends!

Today we are celebrating June Dairy Month with this delicious wrap filled with mozzarella, tomato, basil and a yummy greek yogurt dip prepared with fresh herbs.

This year my top dairy picks have been 1% milk and mozzarella cheese, which is what inspired this little creation. If you make a lot of sandwiches or wraps, I’m guessing you might use sliced cheddar? But I beg of you, try it once with a slice of mozzarella. Your life may never be the same.

June 1st was not only the beginning of June Dairy Month, but I also started my 1 year term as President of the Nebraska Academy of Nutrition and Dietetics. It’s definitely a huge task, but I’m excited about the year ahead. As a leader I’ve learned that not everybody is going to get along or agree with your decisions. It’s kind of like when I make a recipe that flops because I’ve used ingredients that do not pair well together. You can’t force it. But when you find the right mix of ingredients and let them marinate, you can produce something really special. I think I’ve definitely found the right mix of people, which makes me excited to see what the year brings. I feel fortunate because being involved in this group has introduced me to some amazing colleagues including Registered Dietitians that work with dairy farmers. And thanks to them, I’ve been able to learn more about how nutritious dairy is and how dairy farmers are committed to sustainability. Win-Win.

Let me tell you about this dip. This is greek yogurt mixed with a little balsamic vinegar, chives, dill, and other spices. It’s great on these wraps or just by itself with fresh veggies! It’s a perfect dip for summer.

I also added just a few slices of salami because…why not? Ha. Actually, the salami adds just the right amount of salt to compliment the tomatoes and mozzarella. Trust me on this.

Mozzarella, Tomato, Basil Wrap

  • 1 steps

Ingredients

  • Herbed Greek Yogurt Dip
  • 1 cup plain Greek yogurt
  • 1 tbsp balsamic vinegar
  • 1 tsp lemon juice
  • 1 tsp of dried chives (1 tbsp of fresh)
  • 1 tsp of dried dill (1 tbsp of fresh)
  • ¼ tsp of garlic powder
  • ¼ tsp salt
  • 1/2 tsp pepper
  • Wrap: (Makes 4)
  • 4 Whole Grain Fatbreads (we used Flatout flatbread – multigrain with flax)
  • 1 1/2 cups romaine lettuce, thinly sliced
  • 16 slices salami (4 on each)
  • 12 slices (about 1 ounce each) Wisconsin fresh mozzarella cheese (3 slices on each)
  • 12 slices tomato (3 slices on each)
  • 12 large basil leaves (3 leaves on each)

Instructions

  1. In small bowl, combine Greek, vinegar, lemon juice, chives, dill, garlic powder, pepper and salt; mix well. Place tortillas on flat surface and evenly spread yogurt mixture over each, leaving some room around the edges. Sprinkle romaine evenly among tortillas, covering entire yogurt mixture. Arrange 4 slices salami overlapping in row down center of each tortilla. Then top with 3 slices fresh mozzarella and 3 slices tomato and 3 basil leaves. Roll one end of tortilla like a burrito and secure with 2 toothpicks, spaced evenly. Slice in half & serve. (Dip recipe will make enough to prepare the wraps plus extra for dipping with fresh veggies.)
