Nebraska recently experienced the first freeze of the fall season, so I’m ready for foods that make me feel warm and cozy inside! And honestly, even though peanuts are delicious all year round, I especially love snacking on peanuts during the fall months because…Dietitian Confession: One of my favorite fall food combinations is candy corn and peanuts!

So, with the Holidays right around the corner, I wanted to remind you (and myself) about why I love peanuts and why you should also include them in other dishes:

Peanuts are a healthy superfood.

Did you know that 1 oz or 30 peanuts contains 7 grams of protein? Not only do they contain protein, but peanuts are loaded with healthy fats and heart healthy nutrients like potassium and magnesium. And eating peanuts regularly can reduce your chances of developing cardiovascular disease by about 30%!

Peanuts are tasty!

I recently started binge watching A Chefs’ Line on Netflix and during Africa week, one of the home cooks decided to include peanut butter in every dish because she said it’s delicious. First of all, she’s my hero and second, she’s not wrong. In my opinion, dry roasted peanuts are flavorful and provide a nice crunch especially when paired with an animal protein source like lean chicken.

Peanuts are affordable.

Dry roasted peanuts range anywhere from 14-16 cents per ounce, making it an incredibly affordable source of protein and healthy nutrients! Adding peanuts to your daily routine is truly an affordable way to improve your nutrition.

Peanut Crusted Chicken Tenders With Simple Honey Mustard

Peanut Crusted Chicken Tenders

Ingredients

  • 1 – 1.25 pound chicken breast tenders
  • Kosher Salt
  • Pepper
  • Cayenne Pepper
  • 3/4 cup flour
  • 2 tsp kosher salt
  • ¼ tsp pepper
  • 2 large eggs, beaten
  • 2 TB milk
  • 1 cup lightly salted roasted peanuts, crushed
  • ½ cup bread crumbs
  • 2 TB fresh parsley, chopped

Instructions

  1. Preheat oven to 400 degrees and line a baking sheet with aluminum foil or parchment paper. Spray pan with a light amount of cooking spray.
  2. Lightly season chicken tenders with kosher salt, pepper and a small amount of cayenne pepper on both sides.
  3. Combine 3/4 cup flour with 2 tsp kosher salt and ¼ tsp pepper. Set aside.
  4. Combine 1 cup crushed peanuts with ½ cup bread crumbs. Set aside. (You can use a food processor to crush peanuts. Pulse peanuts until reaching a chopped consistency.)
  5. Combine 2 eggs and 2 TB milk. Set aside.
  6. Set up a breading station using seasoned flour, eggs and peanut mixture. Dredge each chicken tender in flour, then dip in egg mixture and finally coat with peanut mixture.
  7. Place on baking sheet and cook for 15-20 minutes until golden brown or the internal temperature reaches 165 F.
  8. Once fully cooked, remove from baking sheet and sprinkle with chopped parsley and serve with lemon wedges and simple honey mustard sauce.

Simple Honey Mustard

Ingredients

  • 2 TB Honey
  • 2 TB Dijon mustard
  • 2 TB Mayonnaise

Instructions

  1. Combine all ingredients and serve as a dipping sauce.
