Happy Foodie Friday, Friends! Today I’m sharing this recipe for a delicious and tasty peanut and gouda cracker! If you haven’t made crackers at home, you are in for a real treat. They are easy to make and make a great addition to any charcuterie board.

Bonus: You can prepare these ahead of time, store in the freezer, pull and bake when you need to entertain a group of friends!

You can serve with your favorite cheese or spreads, but I highly recommend my whipped feta dip topped with sun-dried tomatoes, parsley, honey and chopped peanuts!

Plus these contain one of my favorite ingredients, peanuts! In fact, the inspiration for this recipe was due to a recent trip to Napa. I was enjoying a fruit & cheese plate and noticed the crackers needed just a little something extra. =) Peanuts are a great addition to crackers because of their flavor, protein and heart healthy fats! Peanut and Gouda Icebox Crackers

  • 5 steps

Ingredients

  • 4 oz unsalted butter
  • 8 oz shredded gouda
  • 6 oz AP flour
  • 1/2 tsp salt
  • 2 oz crushed peanuts

Instructions

  1. Using an electric mixer, start by creaming the butter for 1-2 minutes.
  2. Add shredded gouda and mix well.
  3. Add flour, salt and crushed peanuts. Blend until well combined.
  4. Using your hands, divide the dough into 3 equal parts and roll each section into a log about 1.5” in diameter. Place in the refrigerator for about 2 hours to allow dough to chill.
  5. Cut dough into 1/8” slices and bake for 10 minutes at 350 F using a baking sheet that is lined with parchment paper. Remove and cool on a wire rack.

Whipped Feta Dip

Ingredients

  • 6 oz. Plain Greek Yogurt
  • 1.5 cups Feta cheese crumbles
  • 3 TB extra virgin olive oil
  • 1/2 teaspoon lemon zest
  • 1 TB honey
  • 1 TB sundried tomatoes, chopped
  • pinch black pepper
  • 1 - 2 teaspoons fresh parsley

Instructions

  1. In a food processor or blender, combine Greek yogurt, feta, olive oil and lemon zest. Blend until smooth.
  2. Top with honey, sundried tomatoes, pinch of black pepper, and parlsey.
  3. Serve with pita bread or veggies of choice.
